veggies for breakies

Thanks to my homegirl, the beautiful and brilliant Stephanie Pollock I’ve found a way to seamlessly squeeze veggies into my breakfast.  (And it has nothing to do with that Mott’s commercial with Marcia Cross).

It’s [cue trumpets] Oatmeal with CARROTS.

Here’s what you need:

3/4 cup carrots

1/4 cup slow cook oats

3/4 cup milk (I recommend almond milk)

1 teaspoon cinnamon

1/2 teaspoon cardamom

dash of salt

1 teaspoon vanilla extract (optional)

spoonful of apple butter

handful of slivered almonds

Here’s what to do with them:

1.  slice up the carrots, make them pretty thin.  This way they cook faster

2.  Place them in a pan with 1/3 cup water and bring to a boil.

3.  Add salt, cinnamon, cardamom, and vanilla.  Cover and cook until soft, and most water evaporated, about 5 minutes.

4.  Add oats and milk.  Bring to a boil then cover and reduce heat.  Cook for another 7-10 minutes.

5.  place in bowl and garnish with apple butter and almonds.

There you go!  You’ve got a heaping helping of veggies and you’ve just started the day.  You’ve got vitamins A, C, K, potassium, fiber… the list goes on.  The carrots also add bulk to your oatmeal and provide just as much sweetness as the fruit you’ve been adding.   If you need it a little sweeter you could add more apple butter, maple syrup, or even fruits themselves.  Seems nutsy cuckoo, but apples, bananas or dried fruit would be rad up in that bowl.  Then the almonds add some much needed crunch and well, you’ve got  yourself one power packed b’fast.

Try mixing it up so you have different breakfast every day!  Eating the same meal each day is like wearing the same outfit everyday… booooorrrriiinngggggg.

  • I have another way! I combine my leftover dinner veggies with two hardboiled organic eggs (one with yoke, one without) and chop it all up for a hybrid breakfast salad/cold omellette. If I need something sweet, I add a little side of yogurt to go along with it. Very refreshing in the summer!
