Quinoa Super Food Salad with Special Sauce

When I ask people why they don’t cook very often the #1 reason is always TIME.  (If that’s not your #1 reason, email me because I really want to know what else keeps you out of the kitchen)

Below is my favorite time saving recipe.  Personally, I eat this a few times a week.  It’s simple, it’s healthy and hot damn, is it delicious.

Super Food Quinoa Salad
Servings: 4
Time: 25 minutes
What you need: a medium pot with a lid, large bowl, tongs or salad spoons

  • 1 cup quinoa
  • 1 cup water or stock
  • 1 Tablespoon extra virgin olive oil
  • 1 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 cups arugula or baby spinach
  • 2 tablespoons dried fruit (cranberries, raisins, apricots, dates…)
  • 2 tablespoons nuts and/or seeds (pumpkin, sesame, hemp, almonds, walnuts, cashews…)
  • ½ cup Special Sauce (see recipe above)

 

Put the quinoa, water, olive oil, sea salt and black pepper in a pot and bring to a boil.  Cover, then reduce to a simmer and cook for 15 minutes.  Remove pot from heat and allow to sit for 5 additional minutes.  Fluff with a fork

Put you greens in a large bowl then put your quinoa on top.  Throw in nuts, seeds and dried fruit then dress the quinoa salad with Special Sauce.  Adjust sauce, to taste.  This dish is great both hot or cold.

 

Special Sauce
Servings: 8
Time: 2 minutes
What you need: medium bowl and whisk OR a jar with a lid

  • ¼ cup extra virgin olive oil
  • ¼ cup apple cider vinegar
  • ¼ cup maple syrup
  • ¼ cup tamari
  • 2-3 cloves garlic, minced

Combine all ingredients in a jar and shake well to combine.
