Chocolate Chip Shit Muffin

I never, repeat NEVER endorse anything microwave-made…but this little shit muffin stole my heart!

My {Healthy} Cooking Camp partner, Robyn Youkilis sent me a version of this recipe and we’ve both been developing it separately…it’s a little addictive.  The thing that gets me is the texture!  Being gluten free, I often crave things that are soft and spongey.  It’s odd–a total texture craving.  Sometimes I’ll make this. But then I have that whole mama-jama hanging around my house.  And no good comes of that!

This little shit muffin is the perfect solution to my cake-y cravings.  It’s a single serving of fiber-filled deliciousness that fills me up (and helps me go).

Disclaimer: This is by no means the most delicious thing I’ve ever made but it is full of simple, healthy ingredients that I always have around.  I actually feel awesome after I’ve eaten it because it’s quite low in sugar and really high in protein/fiber.  My blood sugar stays stable and I cure the craving.  #ShitMuffinForThe Win!


Chocolate Chip Shit Muffin

Servings: 1
Time: 5 minutes
What you need: a bowl, a fork, a microwave safe cup or mug

  • ¼ cup finely ground flax meal
  • 1 organic egg
  • 1 teaspoon baking powder
  • 1 teaspoon butter or extra virgin coconut oil, melted
  • 1 tablespoon cacao powder
  • 1 tabelspoon dark chocolate chips
  • 1 teaspoon vanilla extract
  • ¼ teaspoon sea salt
  • A pinch of cardamom (optional, just adds a little sumthin-sumthin)
  • 1 tablespoon maple syrup


Crack the egg in a bowl and whisk well, until frothy.  Then add in the rest of the ingredients and mix well until fully incorporated.

Put the batter into a mug or microwave safe mug and put it in the microwave for 60-70 minutes (depending on the intensity of your microwave).

It should slide right out of the cup, put it on a plate and enjoy it warm.
