Rad Red Summer Salad

There is something I don’t understand and it’s really been weighing on me recently.  Why is it that most summer BBQ food is really heavy and fatty?  It goes against all common sense!

In the summer people typically crave light, cooling food.  Yet American parties are always full of charred meat, mayo soaked potatoes and bland pasta salads.  Can someone PLEASE explain this to me?!?

When I’m sitting around in a sexy swimsuit the LAST thing I want to eat is cheese burger.

If you’re like me, you’re now in luck.  I have the perfect summer salad you can bring to any BBQ that will satisfy your taste buds without leaving you feeling like a sweaty lump of lard (pardon the dramatics).

I present, my Rad Red Summer Salad.  It looks pretty and tastes amazing.  Even the burger lovers will get down with this non-salad-y salad.

Rad Red Summer Salad

Servings: 6
Time:  10 minutes
What you need: a large mixing bowl, a cutting board, a big sharp knife (for watermelon), and a serrated knife (for tomatoes)

  • 3 cups Seedless watermelon, cubed
  • 3 cups cherry tomatoes, halved
  • 1 Red Onion or 2 shallots, finely sliced
  • 1/2 cup Basil, roughly torn
  • 1/2 cup Feta, crumbled
  • 2-3 tablespoons Red Wine Vinegar
  • 2-3 tablespoons extra virgin olive oil
  • Sprinkle of sea salt
  • Pinch of cayenne pepper (optional)


Put all ingredients in large bowl and mix well.  Serve immediately.
