Apple Cinnamon Muffin Bowl

Several months ago I posted a recipe for my Chocolate Chip Shit Muffin and people went absolutely nuts.  In a good way.  I’ve been playing around with the recipe and finally struck gold with another incarnation of this easy-bake, flax-filled, single serving treat that is so simple it will blow your mind.

With minimal ingredients and maximum health benefits this recipe is the perfect solution for anyone with a sweet tooth, carb cravings and/or very little time.  It literally takes 1 minute to cook.  ONE MINUTE.  And I never, every condone anything microwave related but this is not your every day thing.  This is a quick fix when you need get a hankering for something spongey and what’s worse: 1 minute in the microwave?  Or co-habitating with a cake for a week?

I’ll take the muffin bowl, thank you very much.

Also, let’s talk about the fact that this is a muffin IN A BOWL, people.  It’s basically all muffin top… but won’t give you a muffin top.  Whoa.  Major.

Apple Cinnamon Muffin Bowl

Servings
Time: 5-7  minutes
What you need: a bowl or mug, a whisk (or fork), microwave

  • 1/4 cup finely ground flax meal (if you have a vitamix you can grind your whole flax seeds in there)
  • 1/4 apple, finely diced
  • 1 egg
  • 1 teaspoon honey
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • A sprinkle of sea salt
  • 1 tablespoon of peanut, almond or sunflower seed butter (optional) to spread on top

Directions

Crack the egg in a bowl and whisk well, until frothy.  Pour in the honey and mix well.

Then add in the flax, baking powder, cinnamon, vanilla and salt and mix well until fully incorporated.  Finally toss in the apples and make sure they are evenly incorporated in the batter.

Put the batter into a bowl or microwave safe mug and microwave it for 60-70 seconds (depending on the intensity of your microwave).

If it’s in a cup, it should slide right out.  If it’s in a bowl just eat it right out of the bowl.  Smear a little nut or seed butter on top and enjoy!
